Easy Enchiladas

  • Heat oven to 350.
  • Cook beef until browned.
  • Stir 1/2 cup of enchilada sauce and 1 cup of cheese into beef mixture.
  • Spread 1/2 cup of the sauce in a 13 x 9 baking dish.
  • Spoon about 4 tablespoons of the beef mixture into each tortilla.
  • Roll up and place seam side down in baking dish.
  • Top with remaining sauce and cheese.
  • Bake for about 20 minutes or until the cheese melts.

    It would be easy to add another star by adding some diced onion and a few slices of Hot/Sweet jalapeano

    This is a great basic "starter" enchilada dish! I think you could add just about what ever your heart desires to this to make it your own. This time I added some chopped onion. Next time there will be some chopped jalapeno's and I'm going to use HOT enchilada sauce to spice it up even more. I did add some salt and pepper during step 3. Topped it off with some shredded lettuce, chopped tomatoes, sour cream and chopped cilantro. Yummy. Thanks for posting.

    Great as made. I took some other reviewer's advice regarding lacking some zip so I added one packet of hot taco seasoning to the meat along with one chopped onion. For ZWT 2009.

    I was making this recipe and realized that the same recipe is on the back of the Old El Paso enchilada sauce. I thought this was an original recipe. I wasn't aware that you could put other peoples recipes on here and call them your own.

    Yummy enchiladas. They were so easy to put together (and cheap too). We like a little spice though so before I rolled them up I put a heavy dose of Chalula on the meat mixture. These were great. Thanks so much for posting!

    I just realized I forgot to review this. Made this for dinner last week and it was a huge hit. I used the larger tortillas because that is what I had on hand. That made 5 large enchiladas. They were quick and very simple to make and tasted fantastic. Thanks so much for the great recipe!

I have two boys Eddie 18 and Brandon 10. I have been with my hubby for 16 years. I work full time outside the home and my boys keep me busy at home. My family likes it too but at times ask my to make just "normal" food, as I forget sometimes to make my own TNT recipes. I cook a lot with with my crock pot as it makes life a lot easier for me. I am always on the look out for new crock pot recipes. I'm not much of a baker as I don't like to measure things. I collect cookbooks and recipes in general. I usually start with a recipe and tweak to my families liking. My Rating System: 5 Stars = The whole family enjoyed the dish and it will be added to my TNT cookbook. Book #220911. These recipes will be made again and again. 4 Stars = Recipe was good, but needed some modifications or it was good but not something we would want on a regular basis.
